Garlic Roasted Radishes with Scallion oil drizzle

You will need:

  • 2 bunches of radishes

  • 2 garlic cloves, minced

  • 2 tbsp avocado oil

  • Salt & pepper to taste

  • Scallion oil (optional) - See recipe: https://www.fuelbetter.ca/recipes/scallion-oil

To make:

  1. Preheat oven to 425 degrees.

  2. Prepare radishes by cutting in half to ensure even sizing for roasting.

  3. In a bowl, combine radishes, garlic, avocado oil & salt/pepper. Mix well.

  4. Spread radishes out in a large glass cooking pan. Be sure to no overlap or over crowd the radishes.

  5. Bake for 25-30 minutes, flipping halfway.

  6. Once removed from oven, place radishes on plate and drizzle with scallion oil.
